Kousa Bel Laban - Zucchini in Yogurt Recipe

Kousa Bel Laban - Zucchini in Yogurt Ingredients:
1 kg zucchini, corred
100 grams minced beef
3/4 cup rice (i used the medium grain rice ftom @rice_eu)
2 TBS roasted pine nuts
1/2 tsp of each: black pepper, allspice, cinnamon
1 tsp salt
2 TBS olive oil
Water to boil the zucchini

The Yogurt Mix:
1 kilogram yogurt (i use cow's yogurt from the market)
1 tsp tahini
1 tsp salt
3 minced garlic
1 and a 1/2 TBS cornstarch dissolved in 3 TBS water (also depends on the consistency)
1/4 tsp of black and white pepper (optional, I use them)
Dried mint


Kousa Bel Laban - Zucchini in Yogurt Recipe

Prepare the filling:
Mix the rice with meat, oil, salt and the spices
Fill the zucchini
Cover them with water and boil them on medium heat for 20 mn
Remove from water and set aside
Preserve 1 or 2 cups from the water used for boiling for later use

Combine the yogurt with garlic, salt, tahini, spices and 1 cup preserved water (add more water if you wish)
Add the cornstarch dissolved in water and whisk well

Place the yogurt mix on hear and keep stirring until the yogurt boils
Add the zucchini, cook for a minute
Turn heat off
Add dried mind
Garnish with roasted nuts of your choice
Serve hot or cold!
