Green Tomato Pickle Recipe
One of the tastiest and easiest pickles out there, you can keep it plain or add whatever you like (garlic, hot pepper, fennel, za’atar, whole black peppercorns).
You’ll need green tomatoes and clean sterilised jars.
Pickling brine: 1 cup water + 1 tablespoon salt + ½ tablespoon sugar
In the jar, add the tomatoes cut into quarters or halves. If they’re small, leave them whole. Add one or two garlic cloves, a whole or sliced hot pepper, then pour in the brine.
Seal tightly and leave for a week before opening. Give this one a try.
It’s delicious, crunchy, incredible alongside any dish, especially mujadara, looks beautiful on the table, and the flavour is something special.
